Healthy Recipe for Diabetes - Apple Coleslaw
Ingredients
Slaw
6 cups shredded green and/or red cabbage
2 unpeeled red or green apples, diced
2 carrots, peeled and shredded
3 tablespoons raisins
Dressing
1/2 cup non-fat mayonnaise
1/4 cup plain non-fat yogurt
2 tablespoons low-fat sour cream
1 tablespoon poppy seeds
2 teapoons apple cider vinegar
1 teaspoon honey or sugar substitute
Salt & pepper to taste
Directions
In a large bowl, combine the slaw ingredients. In a separate bowl, combine the dressing ingredients; mix well. Add the dressing to the slaw mixture and toss together. Cover and refrigerate for 1/2 hour before serving.
