Healthy Recipe for Diabetes - Stir-Fried Beef with Burdock

Ingredients: (serves 6)
Shredded Beef Filler - 4 oz
Burdock - 7 oz

Shredded ginger - 1 T
Cooking Oil - 1 T

custom special sauce 1 -
1/4 c. Water
1/2 t. each: Cooking Wine, Sesame Oil
1 T.  soy sauce

1/8 t. MSG
custom special sauce 2 -
1/2 t. Cornstarch
1 T.   Water


Directions:
1.Wash burdock and cut into segments and shred (net weight approx. 120g).
2. Heat wok add 1 T. oil; stir-fry shredded ginger until fragrant. Add shredded beef and continue to stir-fry until done. Remove and set aside.
3. Re-heat wok and add burdock; mix in  custom special sauce 1 until done. Add pre-fried beef and mix thoroughly.  Pour in mixture custom special sauce 2 to thicken sauce.

To prevent discoloring of pared and shredded burdock, keep immersed in water.  Drain prior to frying.
