Healthy Recipe for Diabetes - Chicken and Bean Sprout Salad

Ingredients: (serves 6)
Chicken Breast - 4 oz
Green Bean Sprouts - 300g
Leeks (cut into segments)- 20g
Shredded ginger - 1 T
Red Pepper - 1/2
Water - 4 c.
Ginger -  3 slices

custom special sauce 1 -
3/8 t. :Salt
1/2 t. each: Sesame Oil, Cooking Wine
1/8 t. each: MSG, Pepper

Directions:
1.Boil 4 cups water; cook chicken breasts with 3 slices ginger over low heat until done (approx. 15 minutes).  Drain and cool. Finger-shred chicken into thin slices and set aside.
2.Wash bean sprouts; discard roots and tips (net weight approx. 230g); Slice red pepper into thin strips.
3. Scald bean sprouts and leeks in boiling water for about 5 seconds.  Drain . While still warm, add custom special sauce 1 and mix thoroughly.  Add shredded chicken and toss. Garnish with shredded red pepper and server.
