Healthy Recipe for Diabetes - Shredded Chicken with Tomatoes

Ingredients: (serves 6)
Chicken Breast - 8 oz
Ripe Tomatoes -  500 g
Snow Peas- 20 g
Egg Whites -60 g
Cooking Oil - 1 T

custom special sauce 1 -
2 T. Water
1.t. Cornstarch
3/8 t. Salt
1/8 each: MSG, Pepper

custom special sauce 2 -
1 c. Water
1/2 t. each: Cooking Wine, Sesame Oil
1 t. Salt

Directions:
1.Shred chicken breasts into thin strips and mix thoroughly with Mix with custom special sauce 1;  Marinate for 30 minutes.  Blanch in boiling water until cooked (approx 20 seconds) Drain and set aside.
2. Wash tomatoes and discard stems and leaves. Scald in boiling water for approximately 10 seconds; drain.  Remove skin and seeds;chop into small cubes.
3. Heat wok add 1 T. oil; add tomatoes and gently stir-fry; add custom special sauce 2 and bring to boil. Beat egg whites and stir in. Immediately add snow peas and continue to stir-fry.  Add pre-cooked shredded chicken and mix thoroughly.

Snow peas contain sugar and is therefore to be used sparingly.
