Lemon Baked Chicken

Ingredients: (Servings: 4)

4 lemons
4 skinless boneless chicken breasts
2 Tbs butter
1/2 c flour
1/2 tsp pepper
1 tsp salt
 
Directions:

Squeeze 1/2 c juice from lemons, marinate chicken in juice and refrigerate, at least an hour and up to 12 hours. Heat
oven to 350 and butter a roasting pan. Melt butter, then combine flour, salt and pepper. Roll chicken in flour mix and
set in roasting pan. Drizzle with melted butter and cook in pre-heated oven until well browned, 50-55 min.


Substituting Smart Balance Light instead of butter can cut Carb/salt.
