
Ingredients: (Servings: 12)
- One and ¼ cup of oat bran cereal – uncooked
- One cup of whole wheat flour
- Two teaspoons of ground cinnamon
- One teaspoon of baking powder
- ¾ teaspoon of baking soda
- ½ teaspoon of salt
- ¾ cup of unsweetened applesauce
- One cup of freshly peeled, cored and diced apple
- ½ cup of honey
- ½ cup of vegetable oil
- One whole egg
- One teaspoon of pure vanilla extract
Directions:
- Preheat oven to 375 degrees.
- Coat twelve medium-size cups with vegetable oil – or line them with paper baking cups.
- In a medium bowl, combine flour, cinnamon, baking powder, baking soda, bran cereal and salt.
- In a large bowl, combine applesauce, oil, eggs, vanilla and honey.
- Stir in the mixed dry ingredients and mix well.
- Stir in the diced apple.
- Fill prepared muffin cups to almost full.
- Bake for 15-20 minutes or until they are golden brown.
- Serve warm and preferably with milk.
