
Ingredients: (Serves: 10)
- Two cups of all purpose flour
- ¼ of a teaspoon of salt
- Two teaspoons of baking powder
- ¼ of a teaspoon of baking soda
- One teaspoon of ground cinnamon
- ¼ of a teaspoon of ground nutmeg
- 2/3 of a cup of toasted wheat germ
- 1/3 of a cup of margarine
- One and ¼’s of a cup of finely chopped apple
- ½ cup of skim milk
- ¼ of a cup of honey
Topping:
- One tablespon of toasted wheat germ
- ¼ of a teaspoon of ground cinnamon
- One tablespoon of sugar
Directions:
- Preheat your oven to 400 degrees and lightly spray a large cookie sheet with non-cooking spray.
- Combine flour, wheat germ, spices, baking soda, baking powder and optional salt together.
- Cut in the margarine until mixture resembles coarse, dry crumbs.
- At this stage, add combined apple, milk and honey and mix until dry ingredients are moistened.
- Turn dough out onto lightly floured surface and knead gently five or six times. Remember to handle the dough gently. Overmixing the dough can make the scones very tough!
- Pat dough into nine inch circle and mix together the topping ingredients (wheat germ, cinnamon and sugar).
- Sprinkle over the dough and cut into 10 wedges.
- Place these wedges half an inch apart on a prepared cookie sheet.
- Bake 16-18 minutes (or until golden brown) and enjoy!
