Ingredients (Serves 4 )
2 1/2 tablespoons Dijon mustard
1 1/2 tablespoons fresh lemon juice
2 teaspoons ground coriander
2 teaspoons ground cumin
1/2 teaspoon pepper
1/2 teaspoon salt
1 pound (24) large shrimp, peeled and deveined
Directions
1 Stir together mustard, lemon juice, 1/2 teaspoon coriander, 1/2 teaspoon cumin, and 1/4 teaspoon pepper in a small bowl. Set mustard dipping sauce aside.
2 Combine salt with remaining 1 1/2 teaspoons coriander, 1 1/2 teaspoons cumin, and 1/4 teaspoon pepper in a large bowl. Add shrimp, tossing to coat.
3 Preheat grill to medium. Thread shrimp onto four long skewers. Place shrimp on grill and cook until opaque throughout, about 1 minute per side. Serve chilled or at room temperature with mustard dipping sauce.
