Healthy Recipe for Diabetes - Gazpacho
Ingredients
3 ounces French or Italian bread
1 large sweet red or green pepper, coarsely chopped
1 red onion, coarsely chopped
1 small cucumber, peeled, seeded, and sliced
8 ounces plum tomatoes, cored and quartered
1/4 cup packed basil or parsley
1 clove garlic, finely chopped
2 tablespoons olive oil
2 tablespoons red or white-wine vinegar
3 cups reduced-sodium tomato juice
1/8 teaspoon freshly ground black pepper
Makes 6 1/2 cups
Directions
1 Remove the crusts from the bread and tear the bread into pieces. Place in a bowl and cover with water. Allow to stand at least 5 minutes.
2 Drain some of the water from the bowl and, with your hands, squeeze out most of the remaining water from the bread. Reserve the soaked bread.
3 Place the sweet pepper, red onion, and cucumber in a food processor and process until very finely chopped. Put the mixture into a large bowl.
4 Place the tomatoes and basil in the food processor and process until very finely chopped but not totally pureed. Add to the pepper mixture in the bowl.
5 Place the garlic, olive oil, wine vinegar, soaked bread, and tomato juice in the food processor and process until blended. Stir into the soup until combined.
6 Add black pepper. Cover the bowl and refrigerate the soup for at least 1 hour before serving.
