Ingredients:
- 1 tsp salt
- 1 egg white
- 2 tbsps cornstarch
- ½ lb raw shrimp, shelled and deveined
- 1 cup lard or oil
- 2 tbsps dry sherry
- ¼ cup stock
- 1 tbsp water
- 1 tsp sesame oil
Directions:
- Mix together the salt, egg white and 1 tbsp of the cornstarch. Add the shrimp and leave to marinate in the refrigerator for 1 to 2 hours.
- Heat the lard (or oil) in a pan. Add the shrimp. Stir to separate them, then lift them out with a perforated spoon, Pour off the excess lard (oil), leaving a small amount in the pan. Add the sherry, stock and shrimp and bring to the boil.
- Dissolve the remaining cornstarch in the water and add to the pan. Stir until thickened. Add the sesame seed oil and serve hot or cold on a bed of lettuce.
