Healthy Chinese Food Recipe 24 - Sea Cucumber with Brown Sauce

Ingredients:
  • 450g (1 lb) Sea Cucumber
  • ½ cup Boiled Bamboo Shoot Slices
  • 6 slices Ginger
  • 6 sections Green Onion
  • 3 Dried Black Mushroom
  • ½ cup Green Pea Pod Tip (Young Green Pea Leaves "Dou Miao")
  • 1 tbsp Chicken Fat (cooked, liquid. Or use Lard)
  • 1 tbsp Sesame Oil
(A):
  • (For preparing the sea cucumber)
  • 12 Sections Green Onion
  • 4 Slices Ginger
(B): (Seasoning)
  • 2 cups Stock
  • 2 tbsp Soy Sauce
  • 1 tbsp Pork Fat
  • 1 tsp Cooking Wine
  • ½ tsp Sesame Oil
  • ½ tsp Sugar
  • ¼ tsp Salt
(C): (Cornstarch Mixture)
  • 2 tbsp Water
  • 1 tbsp Cornstarch 
Directions:
  1. Wash the soaked sea cucumber and cut into slanting slices. Soften mushroom in hot water, discard the stem and cut into slanting slices.
  2. Bring 7 cups water to boil in a pot with (A), add in sea cucumber to cook for 3 minutes. Remove and drain. Discard (A) (the boiled green onion & ginger)
  3. Heat the wok, add 3 Tablespoons oil. Stir fry green onion & ginger until fragrant. Add in sea cucumber, bamboo shoot and mushroom, stir fry slightly.
  4. Mix in (B) to simmer for 5 minutes, then add in green pea pod tip (young green pea leaves).
  5. Thicken with the mixture (C). Sprinkle on chicken fat and sesame oil; serve hot.
