Ingredients:
- ½ lb lean pork, shredded
- 1 tbsp soy sauce
- 9 tbsp oil
- 6 eggs, beaten
- 2 tbsps dried wood ears, soaked for 20 minutes, drained
- 2 scallions, shredded
- ½ tsp sugar
Directions:
- Mix the pork with the soy sauce.
- Heat 6 tbsps of the oil in a pan. When very hot, add the eggs and stir-fry until set. Cut into thin strips, using a spatula, and transfer to a plate.
- Add the remaining oil to the pan and heat.
- Add the pork, mushrooms and scallions, and stir fry until the pork is cooked.
- Add the egg pieces and the sugar, mix well. Serve immediately.
Note: The dish is traditionally served with Mandarin Pancakes. Garnish with shredded scallions and thin strip of cucumber.
