Ingredients: (Serving: 6)
- 2 pounds fresh green beans
- 3 tablespoons olive oil
- 2 tablespoons white-wine vinegar
- 1 tablespoon Dijon mustard
- ½ large sweet onion, such as Vidalia or Walla Walla, finely chopped
- Salt and pepper, to taste
Directions:
1. Remove the top and the tail of the green beans, and slice in half diagonally.
2. Bring a large pot of salted water to a boil and add the green beans. Cook for about 8 minutes, or until just tender.
3. Meanwhile, in a medium bowl, stir together the oil, vinegar, and mustard. Add the onions and season with a little salt and pepper.
4. Drain the beans well. Pour the vinaigrette over the hot beans and marinate for at least 10 minutes before serving. Serve warm or at room temperature.
