Moo Shoo Pork


Ingredients:
  • ½ lb lean pork, shredded
  • 1 tbsp soy sauce
  • 9 tbsp oil
  • 6 eggs, beaten
  • 2 tbsps dried wood ears, soaked for 20 minutes, drained
  • 2 scallions, shredded
  • ½ tsp sugar

Directions:

   1. Mix the pork with the soy sauce.

   2. Heat 6 tbsps of the oil in a pan. When very hot, add the eggs and stir-fry until set. Cut into thin strips, using a spatula, and transfer to a plate.

   3. Add the remaining oil to the pan and heat.

   4. Add the pork, mushrooms and scallions, and stir fry until the pork is cooked.

   5. Add the egg pieces and the sugar, mix well. Serve immediately.

 

Note: The dish is traditionally served with Mandarin Pancakes. Garnish with shredded scallions and thin strip of cucumber.
