Italian Biscotti
Ingredients
Nonstick cooking spray
2 1/2 cups all-purpose flour
1 1/4 cups sugar
2 large egg whites
1 tablespoon canola oil
2 teaspoons anise or vanilla extract
Makes 20 biscuits
Preparation
1 Preheat oven to 350°F. Lightly coat a 15 ½ x 10 ½-inch jelly-roll pan with nonstick cooking spray and dust with flour.
2 In a medium bowl, combine flour and sugar. In a small bowl, lightly beat the eggs, egg whites, oil, and anise extract. Using a rubber spatula, stir the egg mixture into the dry ingredients until a dough is formed.
