Ingredients: (serves 6)
Protein-free Rice Noodles - 40g
Rice - 30g
Green Bell Pepper - 30g
Onion - 30g
Carrot - 20g
Shredded Pork Side or Belly - 30g
Cooking Oil - 2 T
Water - 3 1/4 c.
custom special sauce 1 -
1/4 t. Sugar
1/2 t. Sesame Oil
1 t. soy sauce
1/8 t. Salt
Directions:
1. Soak protein-free rice noodles in 3 cups water until soft. Refrigerate overnight. Drain and chop.
2.Rinse rice until water runs clear; drain. Add 1/2 cup water and mix in pre-soaked chopped rice noodles; stir until well-mixed. Pour 1/4 cup water into outer layer of rice cooker. cook rice and noodle mixture until done.
3. Wash and dice green pepper, onion and carrot. Set aside.
4. Heat wok add 2 T. oil; stir-fry onion until fragrant. Add pork and diced carrots, . Stir-fry until cooked. Mixed in pre-cooked rice and noodles mixture; season with custom special sauce 1 and diced green pepper. Stir quickly and serve.
